Jesse Rossbach has accumulated over a decade of culinary experience in restaurants across the Southwest United States and West South Central region. His career first took off in Colorado at SIR Loin Meat Shoppe, where he served as Head Butcher from 2007 to 2009. He worked concurrently as a butcher while attending school, studying under the College of Culinary Arts at Johnson & Wales University from 2007 to 2011. Since then, Rossbach has held positions as Sous Chef for Fox Restaurant Concepts — working in Colorado and Arizona, as well as Texas — before becoming the Sous Chef at CRÚ Food & Wine Bar in Austin, Texas.
In 2015, Rossbach became Sous Chef at renowned Texan chef Tim Love’s restaurant Lonesome Dove Western Bistro in Austin, Texas. After two years, Rossbach then moved to Knoxville, Tennessee, where he now holds title as Chef de Cuisine at the Lonesome Dove in the heart of the Old City.
