Favorite post-shift meal/late-night snack?

Carnitas at Los Gallos on Nollensville Road.

Go-to cooking soundtrack?

A mix between Charlie Robison, Shooter Jennings, Jimmy Buffet, Old Crow Medicine Show and R.L. Burnside…. something like that.

Which words or phrase do you most overuse in the kitchen?

Your knife needs sharpening.

Most underrated or overrated ingredient?

Underrated – Acid. Fresh squeezed lemon or lime juice.
Overrated – Chipotle peppers. I just wish they would go away for a while.

Favorite Nashville spot?

Too hard to answer. I have too many friends serving too many favorites of mine!
