The Dish: Amanda Freitag

You already know your favorite chefs by the foods they prepare and the restaurants they’ve created. Now, get to know a different side of these culinary masterminds in our new weekly The Dish feature. From behind-the-scenes kitchen talk to culinary soundtracks and Nashville recommendations, we’re bringing you the dish – straight from the pros.

Last week we caught up with Chef Aarón Sánchez, and this week we check in with the talented Amanda Freitag of New York’s Empire Diner.

Favorite post-shift meal/late-night snack?

Chips, guacamole and a cold beer.

Go-to cooking soundtrack?

I love listening to 80’s pop while I’m cooking, it just reminds me of being a kid and it’s so silly and fun.

Which words or phrase do you most overuse in the kitchen?

I curse a lot in the kitchen — especially if something is really tasty and it’s “f*&%ing delicious!”

Most underrated/overrated ingredient?

Truffle oil is totally overrated! It is not a real product.

Favorite Nashville spot?

City House! Tandy Wilson rocks.

Join us at the Festival to see Chef Amanda Freitag in action during her ‘Egg-spertise’ demo at 1:15PM on Sunday, 9/21.
